Well, it hit me today - though I knew my daughter would not be home for Christmas, as I was shopping for goodies to do the baking so that I can get it all done and mailed off to her on time, it hit me that she won't be home for our traditional Christmas morning breakfast...
I have prepared the same breakfast for 21 Christmas mornings. It's our special thing, but this year - hmmmm.
I stood in the isle at the grocery store not quite knowing what to do, forgetting entirely what I was there for, and crying just a tiny bit. Funny where and when these things will hit you.
Well, I guess it's time to grow up now. Kid is grown and gone, and it's time for me to get back to whatever it was I was doing prior to motherhood... (whatever that may have been)
On the brighter side, perhaps the dog would enjoy a special Christmas breakfast this year!

Delicious Lunch!!
OMG - I have been soooo tired lately! So tired that the other day I stepped into the shower, and though I knew something was wrong - I just couldn't figure out what it was...
I stood there a few minutes enjoying a nice hot shower, and as I did so I looked down.
Ah - there was the problem... I had climbed into the shower with my slippers on!
Big-ass shower fail! (but worth the giggle ;o)
Well, I am more rested now. I have been plowing through a lengthy editing project and am finally nearing the end. I can now consider finding time to make food and get some much needed rest!
As I finished up article 96 of 100 just before lunch time today, I though I would take a moment to prepare something more than toast with peanut butter...
Yes, toast and peanut butter is one of my favorite standby meals. It's quick, delicious, nutritious, and NO pots to wash!
But today I fancied a little more as the peanut butter novelty wore off about two weeks ago. So, looking in the cupboard I spied a tin of tuna!
I love tuna, and I usually make the same old tuna salad that my mother makes: tuna, mayo, salt, pepper, chopped celery. It's great, but I have done it a kagillion times.
Today I spiced things up a bit by adding a generous helping of Sweet Thai Chili sauce to the mix - and... OMG so DELish!
Try some:
One tin tuna (dolphin friendly, of course)
Mayo
Salt
Chopped Celery
Sweet Thai Chili Sauce (to taste - if you like it hot, add lots!)
Organic Brown Rice Cakes
Combine tuna, mayo, salt, celery, and Sweet Thai Chili Sauce in a bowl and stir until all ingredients are well mixed.
Spread tuna mixture over Organic Brown Rice Cakes. Garnish with fresh chopped Cilantro (optional).
